I don't see why more games havn't gone that route. By reducing the amount of colours, it dramatically reduces the size of textures, freeing up room for more detailed models. Hell, I reckon you could probably hit uncanny valley on current hardware.

Well, it just depends on if it's an appropriate stylistic choice for the game... Also, games in colour will appeal to more people than black and white ones as a rule (a lot of people refuse to watch black and white movies, if you can believe it), so it'd probably be something that depends on the specific game's art direction.

But I do agree that I'd like to see more black and white noir-ish games. There's only concept art revealed so far of Sadness, but it sounds rather interesting.

I dont know about you guys, but i enjoy watching colors in games, like a big green jungle/forest, plasma shots, explosions, purple vehicules, etc etc.

Hell yeah. But black and white could lend itself really well to certain games, like Cel Shading did for XIII
